When I am grilling steaks I do not like the flavor to be out of this world over powering. This recipe has a nice subtle smokey flavor to it. It doesn’t take away from the juiciness of the steak, and is nice compliment to the natural flavors of the meat. It was a lovely Friday night dinner.

Smokey Steak Run

  • 1 tsp smoked paprika
  • 1/2 tsp dark chili powder
  • 1/2 tsp sea salt
  • about 1.5 lbs of steak

Mix the 3 seasonings together well. Lay your pieces of steak out. Rub each side with generous amounts of the seasoning. I used all of it up. Let stand for about 15 minutes. Toss on a grill and grill until it is cooked to your liking.

Note:

I used filet mignon. I had 3 of them. I sliced each one in half, thinning them out. They were still nice and thick though. I ended up having 6 smaller steak pieces. I cooked them medium well. It is a compromise in our home. I would prefer a medium steak and my husband would prefer a well done steak. We meet in the middle. Marriage! Ha!

I really enjoyed the smokey flavors of this meal. I love the simplicity of it. There are not a ton of ingredients in it, yet it still has a lovely flavor.

Spanish Steak

  • about 1.3lbs of steak, cut into pieces
  • 1/2 yellow onion, diced small
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • 1 Tbsp red wine vinegar
  • 1 tsp sweet smoked paprika
  • 1/4 tsp sea salt
  • fresh black pepper to taste
  • 2 vine ripe tomatoes, chopped

Cook the onions in the olive oil until they are tender. Add the garlic and cook another minute. Add the steak pieces, red wine vinegar, smoked paprika, sea salt, pepper, and tomatoes. Mix well. Bring the mixture to a bubble. Turn down the heat a bit and continue to stir and cook., until the tomatoes are soft, break apart, and partially become sauce like. You can cook a little longer or shorter depending on how well you like your steak pieces. Mine ended up medium well.

I served them over julienned rainbow carrots. I simply sautéed those in a drizzle of olive oil until slightly tender. Delicious together!

The weather has been beautiful the past two days. Yesterday was nice enough to enjoy using my grill. I was inspired to make this dish by finding these very pretty purple peppers at Whole Foods the other day. I love incorporating color into my meals. It even helps get the little ones excited about veggies. These were too pretty to pass up!

Grilled Steak with Greek Peppers

For the meat:

  • 2 steaks. I used filet
  • 1/2 lemon juiced
  • touch of olive oil
  • sea salt, to taste
  • fresh black pepper, to taste

I trimmed the meat and sliced it lengthwise so the pieces were thinner and grilled quicker. I mixed the lemon juice and olive oil in one small bowl. The sea salt and pepper in another. I brushed each side of the meat with the lemon juice/olive oil. Then rubbed the sea salt/pepper into the meat.

I grilled on low until the steaks were about medium well. Slice up the steaks, set aside.

For the Peppers

  • 2 small purple bell peppers
  • 1 small red bell pepper
  • 1 Tbsp olive oil
  • 1 clove garlic
  • 1 Tbsp of my Greek Seasoning 
  • 1 Tbsp apple cider vinegar
  • 1/2 lemon juiced
  • Several handfuls of spinach/arugula mix. You could also just use spinach. I just had this leafy green mix
  • Fresh chopped Italian parsley, to taste.
  • Feta, to taste
  • Whole wheat Pitas

Heat the oil in a large pan. Add the minced garlic. Heat for a minute. Add the sliced peppers, Greek seasoning, vinegar, and lemon juice. Cook until peppers are tender. Add the spinach/arugula and the sliced up steak. Allow leafy greens to wilt. Add parsley, mix well. Serve on warm whole wheat pita bread. Top with a little feta.

I get excited when I come up with different spice blends that I can store for continued use. This meal came from that. I actually found the cutest little mason spice jars over the weekend. I have a mason jar OBSESSION! I bought 3. I will likely go back and get more. Now I needed spice blends to fill up those jars. This meal comes from one of those blends. Middle Eastern Steak and Veggies

  • 2 filets, cut into pieces
  • 2 Tbsp olive oil
  • 1 garlic clove, pressed
  • 1 Tbsp Middle Eastern Spices. I make my own blend
  • 1/4 tsp sea salt
  • 1 lemon zested/juiced
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 zucchini, zoodled into short pieces
  • 2 Tbsp pine nuts

In a large pan, heat the garlic and olive oil. Add steak bits and begin to brown. Add the Middle Eastern seasoning and sea salt, mix well so all pieces are coated. Continue to cook. When most pink is no longer noticeable, add the red and orange peppers. Cook until peppers begin to get soft. Add the zucchini, lemon zest, and lemon juice. Let the zucchini begin to get tender. Add the pine nuts, mix well, heat through. Serve!

They are photoed alongside my Cinnamon Sweet Potato Bites. It was a nice compliment to this meal.

Nothing is quite so lovely as the smell of steak being grilled. At least that is how I felt last night. Jackson had been begging me for a few days to cook on the grill. I was finally able to whip something up out there. I can feel summer creeping in. It is cooler again today. But these warm days we keep getting are enough to hold me over. And any colder temps beat the subzero ones we had a month ago!

Simple Steak Rub

  • 1/2 tsp sea salt
  • 1/8 tsp garlic powder
  • Fresh black pepper to taste. I did around 10 twists

Combine all the seasonings in a small bowl and mix well so they are blended.

I used Filet Mignon for our steak last night. I had two and I cut each in half lengthwise, so they were thinner. Then I tenderized them with this handy tool received for Christmas, the Steak Ninja. Then I sprinkled some of the rub over each steak. I rubbed in into the meat. Flip the steaks over, sprinkle more seasoning, and rub in. I ended up having a little bit leftover. You could use all of it, I am always cautious with my amount of seasoning right now because of the tiny taste buds that eat our dinners. I error on the side of caution.

I let them sit for around 5 minutes while I prepared the veggies for grilling and got the grill started.

Grill to your liking.

They turned out delicious without using ever last speck of rub. To me they almost had a sweetness to them. They smelled amazing on the grill. The meat kind of melted in my mouth.

I am going to go ahead and post the potato recipe as well. Look around for that if you want something yummy to accompany this steak.

My sweet boy is sick. He even had a bit of a fever last night. The only meal he had eaten yesterday was breakfast. This child is normally an eating machine. There are days where I can barely keep up with getting food to him. His metabolism is off the charts! I wanted him to try to eat some dinner. I let him know his options. He picked one of his favorite meals. Potatoes. And steak would do for the meat.

  • Aprrox 1lb of steak, a little over would be fine. I used tenderloin.
  • 2 Tbsp Olive Oil
  • 1 large clove of garlic
  • 2 Tbsp Balsamic vinegar
  • 1/2 Tbsp Red Wine Vinegar
  • 1 lemon juiced
  • 1/4 tsp ground mustard
  • Pinch sea salt
  • A couple twists of fresh black pepper

Cut the steak into pieces. Sauté the garlic for a couple minutes until fragrant. Add the steak and brown. Once browned add the Balsamic vinegar, red wine vinegar, lemon juice, mustard, sea salt, and pepper. Bring the sauce to a nice bubble. Reduce a bit and cook until the steak is done to your liking. This will vary depending on the size of your pieces and your preference. Mine cooked a little longer because the husband likes steak well done and Jackson gets freaked out over the fact that he once saw blood come from steak I was prepping!

I served this over my roasted red potatoes. One the side were rainbow carrots which had been lightly sautéed in some olive oil. They still had a slight crisp to them.

Jackson ended up only eating a few bites. It was at dinner that we realized his fever had gone up. He also just felt entirely miserable. You could see it all over his face. So he got some popsicles and we enjoyed this nice yummy meal.

Soon I will get my red potato recipe up as well! It truly is a go to for me. Jackson is obsessed with them. It is his most favorite dish of mine. It is so versatile they literally go with almost anything!
